We’ve been getting asked a lot about spumoni. Truth be told, it’s not something you’ll find in Italy. And, honestly, it scared us. It usually involves neon green “pistachio” ice-cream that doesn’t taste like pistachio, chocolate ice-cream that isn’t very chocolatey, and vanilla ice-cream that’s, well, vanilla.
We decided to give it a shot. We put it in cake form to change things up a bit and we use gelato that tastes like it should. Pistacchio from Bronte, Sicily, chocolate from Guyaquil, Ecuador, and a mixed berry sorbet. Slap a graham cracker crust on the bottom and cover it all up in a semifreddo mousse, and now you’ve got something interesting. Customizable of course. Candied fruit, pistachios, a layer of spongecake… your choice.
